Summer Menu “NAGANO”


The second chapter unfolds in Nagano.


Here, vegetables nurtured in the crisp highland air, buckwheat shaped by the rugged landscape, and the quiet bounty of the mountains come together, marrying Nagano’s distinct terroir with an elegant Italian sensibility.

ARMANI/RISTORANTE will host a one‑night‑only Four Hands Dinner on 17 June 2026, bringing together Executive Chef Bruno Hiruma and Ryūichi Nishimoto, chef‑owner of MANO in Karuizawa. The dinner forms the second chapter of “47 Roots”, a project exploring the diversity of Japan’s regional cuisines through the lens of the Armani philosophy, with a focus on ingredients sourced from Nagano. Chef Nishimoto’s cooking is shaped by an ongoing dialogue with nature – forest and fire as driving forces – while Bruno’s approach centres on purity and balance, refining Italian tradition through precision. Their distinct sensibilities offer complementary perspectives on the same territory.

Born in Mallorca and raised in Barcelona, Chef Bruno Hiruma brings together European and Japanese sensibilities through a distinctive culinary style shaped by both cultures.


A Sensibility Shaped by Hokkaido’s Seasons


His culinary philosophy was truly forged in 2010 when he moved to Japan, spending five years in Hokkaido. It was here, amidst the dramatic northern landscapes, that he developed a profound appreciation for the micro-seasons and the purity of local ingredients.

Today, Chef Bruno works in close collaboration with artisans across Japan, building relationships rooted in mutual respect and a shared dedication to craftsmanship. Honoring the absolute integrity of every ingredient, he seamlessly weaves Armani’s refined philosophy with regional heritage to create a singular narrative on the plate – a sincere dialogue expressed through quiet depth and effortless elegance.
